Today I made casserole for the weekend to try out my new enameled cast iron braiser. ππ
Main ingredients:
1. I used instantpot to cook chopped carrots. Using the juice coming from carrots to mix with organic unsalted peanut butter and garlic to add in the dish.
2. Add varieties of bell peppers, sliced golden potatoes , carrots, ginger, dehydrate garlic and onions, nutritional yeast, herbs seasoning.
3. Coat the bottom of pan with olive oil. Baked in oven at 375F for 20 mins. The result is beautiful, everything cooked through and non-stick for the pan. ππ
Itβs perfect lunch/dinner with some fresh sliced tomatoes and a cup of tea. ππ

Thatβs exactly the term for the sauce Happyman4, peanut satay sauce ππ Itβs one of the most savory dipping sauce for many dishes we have in VN. We steam leafy veggies, make egg rolls to dip in that too. πThatβs very healthy you cooked quinoa, did you make from scratch or precooked? Over here I just get a big bag of precooked quinoa, leave in the freezer and ready for anything.
Itβs very interesting you have quinoa with soya milk, hmmm I sure will try it next. ππ
I remember shower rains happened very often there but raining all days and nights were very rare, climate must change dramatically to be like this. π€
Iβm sure you always are going to come up something delicious from your garden and kitchen cabinet. ππ
P.S. Iβm soaking some cashew nuts now and will make gluten free vegan chocolate bars later on tonight π

Iβm toasting raw almonds now and everything will be ready to make later on. Itβs only 7:30 pm around here so plenty of time to make some treat later on. π
