Weekend meal: Peanut Butter Garlic Sauce Veggies Casserole. 🌱πŸ₯˜πŸ˜‹β€οΈ

Hello everyone, hope you have a wonderful weekend and nourish yourself with plenty of wholesome veggies! πŸ€—

Today I made casserole for the weekend to try out my new enameled cast iron braiser. πŸ˜‹πŸ‘

Main ingredients:

1. I used instantpot to cook chopped carrots. Using the juice coming from carrots to mix with organic unsalted peanut butter and garlic to add in the dish.

2. Add varieties of bell peppers, sliced golden potatoes , carrots, ginger, dehydrate garlic and onions, nutritional yeast, herbs seasoning.

3. Coat the bottom of pan with olive oil. Baked in oven at 375F for 20 mins. The result is beautiful, everything cooked through and non-stick for the pan. πŸ˜πŸ‘

It’s perfect lunch/dinner with some fresh sliced tomatoes and a cup of tea. πŸ˜‹πŸ‘

It’s so delicious with peanut sauce which makes casserole taste so savory as my first time trying it out. πŸ˜‹πŸ‘

Yes, I love nutritional yeast in this type of baking which makes it so cheesy tasty and healthy too. 😁

Yes very busy. I try to eat more veggies these days. I had bok Choy couple days ago and for dinner I had eggplant with assorted veggies

That’s exactly the term for the sauce Happyman4, peanut satay sauce πŸ˜πŸ‘ It’s one of the most savory dipping sauce for many dishes we have in VN. We steam leafy veggies, make egg rolls to dip in that too. πŸ˜‹That’s very healthy you cooked quinoa, did you make from scratch or precooked? Over here I just get a big bag of precooked quinoa, leave in the freezer and ready for anything.

It’s very interesting you have quinoa with soya milk, hmmm I sure will try it next. πŸ˜πŸ‘

I remember shower rains happened very often there but raining all days and nights were very rare, climate must change dramatically to be like this. πŸ€”

I’m sure you always are going to come up something delicious from your garden and kitchen cabinet. πŸ˜‹πŸ‘

P.S. I’m soaking some cashew nuts now and will make gluten free vegan chocolate bars later on tonight 😁

I’m waiting for whole food market to deliver my vegan cacao butter which is one important ingredient that I’m missing to make chocolate.

I’m toasting raw almonds now and everything will be ready to make later on. It’s only 7:30 pm around here so plenty of time to make some treat later on. 😁

It’s such a good marinated sauce, nutty buttery with a hint of cheesy flavor of nutritional yeast. I enjoy the leftover today too. πŸ˜‹πŸ‘
