For today and weekend meals, I baked lasagna made out of sliced plantains with veggies fillings, top with crushed walnuts and cheese sauce. π
There are 3 steps for this dish:
1. Fillings: sautΓ©ed 1/2 cup of red lentils (boiled separately first to tender texture), onions, garlic, ginger, bell peppers, mushrooms, diced baby tomatoes, crushed walnuts and tomato paste. Spice used: ground cumin, chili powder, oregano, apple cider vinegar, salt and pepper to taste.
2. Plantain: I used 4 ripe plantains, thin sliced and coated with maple syrup and sprayed avocado oil in air dry oven first. ( I love these so much can eat by themselves. π)
3. Cheese sauce: homemade cashew milk, miso paste, apple cider vinegar, nutritional yeast, dehydrated onion, garlic powder, a bit of salt and starch for thick paste.
Layer prepared plantain slices in place of lasagna sheets, add fillings to 3 layers I made. Baked at 375F for 30 mins and ready to serve! This is perfectly reserved in refrigerator for 3 days.ππ
