Lunch: Baked Portobello mushrooms, asparagus with Cashew garlic sauce. πŸŒ±πŸ˜‹β€οΈ

Hello everyone, hope you have a good Friday so far! πŸ€—

Today lunch/dinner, I baked Portobello mushrooms, asparagus in cashew garlic sauce, served with purple rice (mix black rice and jasmine rice). πŸ˜‹πŸ‘

Step 1: marinate mushrooms: cloves garlic minced, balsamic vinegar, extra virgin oil, paprika, soy sauce, lemon juice,salt and peppers. Let it sit for 30 mins.

Step 2: creamy smoky garlic sauce:

Blend these: extra virgin oil, dehydrated onion flakes, cloves garlic minced, 1/2 cup of toasted cashews, starch, water, lemon juice, and nutritional yeast.

Last step: add star anise, cardamom, paprika, rosemary, freshly chopped basils and peppers. Mix everything together and bake at 375F for 15 mins.

I really enjoy this creamy sauce which makes the dish so savory and delicious. πŸ˜‹πŸ‘

I really love the sauce and by blending toasted cashew, it makes so extra creamy and savory.

Looks outstanding πŸ˜πŸ˜‹. Your sauce looks amazing, I bet it would taste good on many other foods too. Lots of good B vitamins in your portobello mushroom and asparagus too. Another well balanced vegan GF meal. Have a good nightπŸ™πŸ€—

I love this combination and the sauce is so flavorful, smells amazing from the oven, definitely lots of nutrients in this dish. It’s great for any pasta, casserole dishes too. πŸ˜‹πŸ‘
