Today lunch/dinner, I baked Portobello mushrooms, asparagus in cashew garlic sauce, served with purple rice (mix black rice and jasmine rice). ππ
Step 1: marinate mushrooms: cloves garlic minced, balsamic vinegar, extra virgin oil, paprika, soy sauce, lemon juice,salt and peppers. Let it sit for 30 mins.
Step 2: creamy smoky garlic sauce:
Blend these: extra virgin oil, dehydrated onion flakes, cloves garlic minced, 1/2 cup of toasted cashews, starch, water, lemon juice, and nutritional yeast.
Last step: add star anise, cardamom, paprika, rosemary, freshly chopped basils and peppers. Mix everything together and bake at 375F for 15 mins.
I really enjoy this creamy sauce which makes the dish so savory and delicious. ππ
