My little cousin is allergic to nuts and he loves cake and jelly as many kids do. He’s going to visit me soon for a swim so I figured to make a healthy purple sweet potato, coconut milk jelly cake for our treat this afternoon. 😁👍
The jelly cake has 2 layers:
1st. Base cake: I used rice flour, potato starch, and lightly mashed purple potatoes into little chunks. I steamed the cake mix in a bamboo steamer instead of baking.
2nd. Jelly: vegan agar combined with coconut milk, purple potatoes purée, a bit of sugar cane and vanilla extract. Pour on top of the steamed cake and let it cool down.
Chill the jelly cake in the fridge for at least an hour, until it’s ready to serve. 😋👍

Yes he is severe peanut allergy and many other nuts which is so common in US. However I’m glad he’s not allergic to animals because I don’t know what to do when my house is full of pets 😁. He has to wear a nuts allergy bracelet for caution. My aunt cooks but she is not really into baking so I’d love to make something for him to enjoy and bring home the rest of the jelly cake. He loved it. 😁👍
I am compassionate with people like you have to avoid certain food too, it’s hard but we manage.😊

Wow!! that is truly living a good life. I hope your cousin takes his time to enjoy that gorgeous looking cake. That literally looks so gourmet like it came out of a cake shop. Bravo!

That’s perfect to have your treadmill in the bedroom Happyman4. 👌😁 Why? Because I have my eliptrical in my bedroom too.
