For Breakfast today, I baked purple potatoes bread with dried cranberries and pumpkin seeds. I used 1 cup of grain-free bread+muffin mix (made with chia, almond flour, coconut flour) and 1/2 cup of potato starch mixed with purple potatoes purรฉe (200g ๐ ). Mixture included: baking powder, xathan gum, and one tbsp of olive oil. Added dried cranberries and pumpkin seeds as the last step. Baked at 375F for 30 mins.
I enjoyed this with a cup of chilled Ajwain seeds and Goji berries ๐ต

I wonder why it is not purple as I expected it to be, maybe pigment of purple potatoes is not strong enough to come through. ๐ค
Hi Byron2020, thank you for your suggestion! It tastes exactly how I like and expect it to be except the color. The mixture paste had a lilac, light purple color and within 30 mins baking was when the color disappeared. I sure will try again and this time maybe steam, add more purรฉe, make it into a cake and see what happens. ๐๐
Thanks for sharing another healthy GF vegan dessert idea. Hey if the taste comes out great then the color doesn't matter๐๐ . I'm sure you're right ,it probably has something to do with the baking process that caused its loss of color. Maybe it reacted with another ingredient๐คท๐ปโโ๏ธ. It can be a dessert, I didnโt have the loaf shaped pan at the moment. ๐ Yes, it tastes great and itโs okay if itโs not purple but Iโll try again and see ๐๐

It's the starch and sugars that makes sweet potatoes look white inside when cooked.

You are absolutely right the starch, sugar, bread mix wonโt make it purple as I experimented again today even I changed the amount of ingredients, still wonโt come through. ๐

I think this looks wonderful, GF bread is very difficult to make, so this is a real achievement and sounds wonderful, that would be perfect in the winter being dipped into some piping hot tomato soup ๐ Thank you for sharing Koko
Mmm. That sounds very tasty. What is the texture like? I might try it with sweet potatoes. I love pumpkin seeds and it is berry season here in the UK.
Last year was a bumber crop, this year not so good but a few small and rather sharp blackberries to be had.

The texture inside is soft and moist very close to potato texture I would say. I used the grain free bread mix instead so I think it would be different if you choose regular flour. ๐ค

Thatโs perfect to try making bread with seasonal crops of pumpkin seeds and berries. Iโm sure you will enjoy this combination very much. ๐๐
