Here's a soup I made with a large spoon of quinoa baby leeks 1 large diced potato diced onion some baby carrots. All par boiled before coarsely blending then bringing back to the boil with half a tin of coconut milk some low salt bouillon a little dried chilli and black pepper. All the veg are bought fresh locally and I like that.
Instead of croutons I grated a small potato and fried that in olive oil and it was really nice and ever so easy to cook. If you use good quality potatoes and oil then there is more vitamin C in this fried grated potato than a couple of apples!

That looks really good - wouldn't have thought about adding coconut milk or quinoa. I've got some veg from last weeks veg box to use up so might give it a go. The grated potato looks good. My husband roasted some kale a few weeks ago to add as a crunchy topping to some soup, and a different way of incorporating some green veg.
