It’s got yogurt in it and I’ve never put yoghurt in a cake before. I adapted the recipe so that it’s a coffee cake with a mocha and walnut icing on top. I’m pleased with how it turned out. I decided to do a single layer square rather than two sponges sandwiched together. It feels really spongey so I’m pleased with how it has worked out. I’ve been hanging out for the weekend since last weekend as I am making one cake a week during lockdown but as I’m at home a lot the temptation is to bake cake and eat it every day 😊

Thank you 💚 I wouldn’t normally have a cake a week but during lockdown I’ve been wanting to bake so I’ve limited myself lol. Last week it was lemon drizzle cake. I hope you’re feeling okay today xx

I'm a bit rubbish in the kitchen. By rubbish I mean inconsistent. My children will vouch for the errrm "interesting" dishes I've (infrequently) produced over the years. They always ate it all up, though; probably being kind to me and my wilting ego! 🥴

Ooh Ali, that looks so yummy and isn't it hard not to bake every day! I think your plan of baking once a week is a very good idea. Your cake has turned out really good and I like the changes you've made to it. I see also that it uses Stork (I remember your post a couple of weeks ago about Stork being Vegan).
