I went off to a farmers market in Cliftonville today which is about an hour away from where I live to track down this vegan blue cheese.
It’s made with cashews and does really taste like blue cheese so I was happy with it.
We also bought some sunflower and pea shoots. Made a nice light lunch!
I don’t think I would want to go to the lengths of making it as it’s something I’d just have for a change now and then but if anyone was interested here is a link to a vegan blue cheese recipe.
