Hi All
Due to the forecast for today I decided to do some cooking and baking, the weather cleared up a little this afternoon and we had showers rather than continual rain but looking out of the window now we have bright blue sky, ah well, I'll make up for it tomorrow with some decent steps I'm sure.
Anyway, back to the kitchen. I made a Vegan cinnamon raisin quick bread which is GF, Low Fodmap Peanut Butter and Banana Baked Oatmeal Bars which are also Gluten Free and Vegan and a Low Fodmap Sweet Potato and Coconut Curry which smells delicious.
I've made the Low Fodmap Peanut Butter and Banana Baked Oatmeal Bars and they are delicious, I can't get enough of them and this is about my 4th batch now.

You will note that the curry doesn't list on how much coconut oil to use so I just used a tablespoon but to be honest I think it would do just as well without any oil so the next time I make it I will omit the oil.
Oh and I forgot to mention, I made the usual batch of roasted peanut butter, anyone that has seen my posts on here know that I love peanut butter, can't get enough of it.
