I made some vanilla Vegan cheesecakes today, to say they taste lovely is an understatement, I'd better put these under lock and key LOLππ.

I've made individual cheesecakes. Also, I only had 400g of the Violife Cream Cheese so just cut the cream and icing sugar down by a 3rd, I kept the biscuit base the same amount, just made more with a smaller amount of mixture - better for the waistline I'd say.

Lol thatβs a lot of cheesecakes Alicia. They look good. Can you freeze them? Also can you remind me of the vegan whipping cream or double cream you buy please and where I can get it?
It sure is Ali and fortunately they do freeze, 2 to 3 months so no need to worry about having to eat the lot although I'm sure I wouldn't find that a problem LOL. I got the Elmlea Plant Based Double cream in Tesco and it's really nice. Here's the link to when the cream was launched:

I'd highly recommend these. One thing I will say though is that I'm pretty sure you could use less Icing sugar in them and that's what I'm trying next time although the author doesn't recommend using less.
