Here is a tomato tart recipe for anyone like myself who is being over run with tomatoes. Homegrown tomatoes are delicious so to me it feels like a waste to put them into soup. I saw this tart on line and thought I might give it a go.
For anyone who doesn’t want to or can’t have nuts I have made a filling like this before using cannellini beans and it worked well. Also you could omit the walnuts and use shortcrust or puff pastry.

Yes, it was slow to start as everyone found this year with the lack of sunshine but once our tomatoes got going they have been great. I have three aubergines on the go as well but its a race against time now before they get big enough and the weather gets too cold. One is well on it’s way though 😁 🍆
