I made this pie today with stir fried smoked tofu, spinach, celery, mushrooms, garlic, onion and lemon Juice. I put it all into a white sauce I made with plant milk and Dijon mustard and used corn flour as a thickener. I topped it with mashed potato with a sprinkling of parsley and put it all in the oven for half an hour.
As an experiment I melted about half a bar of fairtrade chocolate. Itβs a thin bar in large flat squares so I think it was 4 or 6 squares and added about two tablespoons coconut cream from the top of a can. whisked it and put it into these tiny glasses and refrigerated. It was very tasty and rich. It would be lovely with raspberries mixed in or made with orange chocolate if you like that.
