Vegan filo pie

Yesterday I made a vegan filo pie. It was a bit of an experiment. I bought filo pastry for a change as haven’t really used it before.

I used:-

Filo pastry x 4 sheets

3 de skinned vegan sausages, half a cup of nuts, miso paste and 2 cloves of garlic (blitzed in blender)

A little passatta

Red Onion, yellow courgette, butternut squash, cut into cubes and roasted

I put about 4 sheets of filo brushed with olive oil into a loose bottomed cake tin.

Covered the base with a little passatta

Put in a layer of the sausage mix

Covered with the roasted vegetables and baked for 15 mins.

You need to be careful that the filo doesn’t burn.

This was really tasty.

I served it with carrots, brocolli and roast potatoes 😋

It was delicious. Tonight to use up the pastry I stir fried cabbage onion garlic and chilli and put it in the pastry and made parcels and that was very tasty too 🙂
