Dinner tonight high protein black beans

Hi,

For dinner tonight I roasted an onion, red pepper and two courgettes.

I stir fried, mushrooms, spinach, black beans, chilli and garlic and put all the vegetables together and served it on top of cous cous (swop for quinoa if Gluten Free) which had pistachios and fresh coriander in.

On top I put a tahini dressing made with tahini, water, lemon juice and black pepper.

I had this with a few salad leaves. The photo doesn’t look great but it was delicious 😋

Thank you. It was. It came out well as when I started to make it I had no plan and wasn’t sure what it was going to be! 😁
