I made vegan chocolate biscuit cake for Easter and also for my son as itβs his birthday on Monday and itβs his favourite.
This time I made it with Rich tea but you can use bourbons or Oreos. I have also melted green and blacks 85% chocolate on top.
Recipe
In a pan heat approx one tablespoon of vegan spread and 4 tablespoons of Golden syrup, two tablespoons of Cadburyβs drinking chocolate. Mix together and add one roughly crushed packet of rich tea biscuits. Stir everything together so well coated and transfer to a parchment lined dish or roasting tin. I used a square glass dish which is 9 in x 7 in. Squash it all down well so it seems like it will hold together but donβt make it too thin. Put in the fridge and then get straight on to melting the chocolate (1 whole bar of green and blacks is what I used) pour on top of the mixture and put back in the fridge until set.
You could add marshmallows or Sultanas before adding the biscuits. This makes about 8 pieces or you could cut each square into two and have 16 triangles. Itβs easy and quick to make.
Delicious and thoroughly unhealthy but sometimes itβs just got to be doneππ
