Hi everyone, Tonight I had my version of a Thai curry. As always it was a bit last minute so had to just use what I already had in the cupboard!
I stir fried some vegetables, (red pepper, onion, fresh tomato, mushrooms, spinach and peas) garlic, ginger, dried curry leaves and chilli and added a teaspoon of curry powder. I cooked it through until the vegetables were tender and then added 1/4 a can of coconut milk and a little veg stock.
I served it with rice and I squeezed half a lemon over the top. A quick, delicious and easy meal for one. π
