Hi, I was going to make a mini cheesecake but the base went wrong so I was stuck with a delicious raspberry filling and no base π. So I melted some chocolate and put a drop into tiny cake cases set it in the freezer and then put a teaspoon of the raspberry filling on top and then some more melted chocolate and put them back in the freezer. They are really tasty so if I was making them again Iβd make them a bit neater and use more chocolate. They would be great served with coffee after a meal if you had friends round. The filling is soaked cashews and a few frozen raspberries blitzed but you could use frozen banana, peanut butter, anything you have to hand. They are a bit messy as I wasnβt planning on posting them but any way they taste great and you get the idea ππ
