Today I started making shepherds-less pie and then it turned into a tofu style fish pie. It was quick and easy to make and made a nice change. I made it at lunch time and reheated it for this evening.
I fried onion, garlic. added diced carrots, spinach, cannellini beans and peas I then found the smoked tofu so added that which was what gave me the idea of a tofish pie. I made a white sauce the consistency of single cream by blitzing cashews and water, adding a teaspoon of Dijon mustard, 2 tablespoons of capers and a squeeze of lemon.
I mixed everything together and topped it with mashed potato. (If I had any parsley I would have sprinkled some on top).
