Apricot cobbler

[Agoodenough]

This is an apricot cobbler type of dessert I made. It’s basically a sponge mixture which I made with some flour and almond flour. I put it in a dish and then put the apricots on top. In an ideal world I would have put flaked almonds on top too but I didn’t have any and I wasn’t going to let that get between me and a dessert lol.

I bought some Swedish glace ice cream today for the first time and wasn’t sure whether to have ice cream or cream with it and thought I’d better have both! 😂

It was delicious and simple 😋 and would be a quick easy dessert to make if you had a crowd of people over for lunch.

Now this does look special Ali, are the peaches halved? I bet it was perfect with Swedish Glace and cream an excellent pudding...😀

Hi Jerry, thank you! it was apricots lol but yes they were halved. It was very nice and I really liked the Swedish glace ice cream. It’s ages since I’ve had ice cream🍨

LOL and apricots it is...I love apricots so I bet it was good with ice cream and that's the only ice cream I eat. 😊

I was going to make an apricot crumble but I changed it whilst making it. I might give that a go next time 🙂
