I have been at home today so decided to do myself a nice lunch as I love cooking.
I made a potato, onion, pea and herb frittata with gram flour
Puy lentils cooked with star anise and beetroot
Cannellini bean hummus
Fennel and onion salad soaked in apple cider vinegar
Cucumber
Lettuce
Tomato
I also made some harrisa paste out of roasted red peppers in a jar with chilli and cumin and some mayonnaise with cashews which didnโt thicken but was very tasty.
I have made extra so hopefully enough for tomorrow as well ๐

Hi Bridget007, aw thank you....you mix gram flour and water together so itโs like a slightly thick paste. Itโs quite bland at this stage so then you have to add your other ingredients with fresh/dried herbs, and whatever veg you have to hand. You can pour it into little cup cake cases, put it in a well oiled glass dish or a baking tray. It sticks to the pan so you have to be careful of that. Itโs really nice and simple to make and you can put anything in it. (Cook the vegetables first). This dish is more about the filling than the batter so you want to put quite a lot of vegetables in which you can stir into the batter or you can add the batter to a roasting dish and then start added the vegetables. Cook for about 25mins. I hope this makes sense! ๐
Haha! Thank you Alicia. My problem is I donโt know what Iโm cooking until Iโm cooking it and even then sometimes it changes mid way ๐ They will say what are you cooking Ali and Iโll have to say hang on, I donโt know yet! ๐ฉโ๐ณ๐คฃ
