Good evening,
Tonight I made a Lasagne with pumpkin, kidney beans, passatta, mushrooms, sweet corn, spinach, red pepper, onion, garlic, basil, parsley a little turmeric and black pepper.
On top I put vegan Parmesan which was nutritional yeast, garlic powder and cashew nuts (blitzed) with a sprinkling of pumpkin seeds.
I made the white sauce and added nutritional yeast and mustard.
It was filling and delicious π
