Today I made a mixture of veggies in wok served over a bed of basmati rice cooked in coconut milk. It takes less than 30 mins to prepare and itβs delicious, bursting with flavors.ππ
Recipe:
1. Cooked Rice: 1 to 1 ratio of basmati rice and coconut milk. I used 1 cup of rice and 1 cup of coconut milk , easily cooked in my rice cooker.
2. In a wok, add just one tbsp of coconut oil and quick stir these mixture: 1 cup chickpea, 1 cup chopped broccoli, 1/2 cup diced red onions, 1/2 cup of toasted walnuts, 1/2 cup shredded coconut, handful of chopped parsley. Seasoned with: 2 tbsp turmeric powder, 2 tbsp smoked paprika powder, 1 tbsp garlic powder, 1 tbsp chili powder, peppers, and a bit of salt to taste.
Very simple lovely combination and I enjoy over a cup of hibiscus ice tea. ππ
