Roast baby parsnips sweet potatoes with bean and veggie casserole 🌢

Hi everyone,

Here's what I had for tea tonight, I roasted some baby parsnips with sweet potatoes coated in ginger and chia seeds. I had it with kale and a Beany casserole which I sprinkled pumpkin seeds and chia seeds on to before baking I also added nutritional yeast to the stock for the casserole.

It's a really easy meal and nutritious and it's what I call real food. I also think that Ali's post on main meals is great advice.

That looks so healthy Jerry. You are good at remembering to use seeds. I’ve got them but often forget to use them! Looks like a lovely harty meal πŸ‘

Thanks Ali, I'd been baking bread so had seeds at hand and had several things baking in the oven and I like that. 🍱
