Roast baby parsnips sweet potatoes with bean and veggie casserole ๐ŸŒถ

Hi everyone,

Here's what I had for tea tonight, I roasted some baby parsnips with sweet potatoes coated in ginger and chia seeds. I had it with kale and a Beany casserole which I sprinkled pumpkin seeds and chia seeds on to before baking I also added nutritional yeast to the stock for the casserole.

It's a really easy meal and nutritious and it's what I call real food. I also think that Ali's post on main meals is great advice.

That looks so healthy Jerry. You are good at remembering to use seeds. Iโ€™ve got them but often forget to use them! Looks like a lovely harty meal ๐Ÿ‘

Thanks Ali, I'd been baking bread so had seeds at hand and had several things baking in the oven and I like that. ๐Ÿฑ
