This is aubergine slices baked in a passatta, mushroom, garlic, basil and onion sauce.
Served with baked polenta with miso, fresh chilli’s, oregano, broccoli and roasted vegetables with a tahini dressing of tahini, roasted sesame seeds, olive oil, garlic, salt and pepper.
I did not know until today that you can get male and female aubergines and that the best ones to cook with are the males which eliminate the need for salting the aubergines to draw out the bitterness. The females aubergines are bitter and have a oval mark on the base where as the males just have a circle. Fancy that! Am I the only person who didn’t know this? lol 🙂
