Tonight I made roasted peppers which I layered with courgette, tomato, onion and a little tofu and put in the oven. I put some passatta on top and purple basil.
I served it with baked potato, spinach, stir fry vegetables with chilli and roasted butternut squash with balsamic vinegar.
This was a success after my strange afternoon where a puppy I was walking, her lead snapped near a main road (all ok in the end) I got a thistle is my thumb and I was stung by a wasp! 🐝
