I love pumpkin since a child from baking goods to food dishes and drinks. This morning, it crossed my mind that it is quite hard to find a place selling gluten-free, dairy-free bagels that tastes great. I decided to make pumpkin bagels instead of muffins. ππ
2. 1 cup of gluten-free all purpose flour (I am trying out this new flour made of brown rice, flaxseed, quinoa and it is wonderful), mix with 3g active dry yeast (mix with warm water and brown sugar till frothy) and 2 tbsp of avocado oil or EVO.
I used stand mix today for quick blend and let the dough rise for few hours. Final blend with cacao chips and pumpkin seeds. Bake at 350F for 30 mins, I got 6 small bagels out of this amount of flour. ππ
Iβm very happy with the result, so soft and chewy texture inside while crispy outside just how a nice bagel tastes like. I enjoy it so much over coconut cream and shredded coconut with sesame sprinkles today. I canβt wait to try this for breakfast with my cashew cheese tomorrow. ππ

Thatβs an excellent idea to be at the beach and enjoy a nice meal over the ocean breeze with broad horizon of the blue sky. Iβm sure your family is going to enjoy that very much and joy all around. π

Awe thank you Debs very much for your kindness! π€πToday I went over my parents to give Maxi his oat bath and manicure, pedicure, I brought over these bagels and they enjoyed so much as they never had this type of savory pumpkin flavor in a bagel. They love the vegan cacao chips in there with pumpkin seeds as a surprise. π They asked me to make bagels with sesame seeds next time. ππ

We enjoy pumpkin and it's cousin butternut squash here as well!
Baby got insulted last week when one of my friends said she is shaped like a pumpkin due to getting too many spoils!

Hi Catgirl, itβs wonderful to see you here in VFL. π€Yes, I love butternut squash as well and we can get it all year round but pumpkin only seasonal or rare to find in the market, gotta settle for canned pumpkin sometimes but that is okay.
Hmmm Baby sounds adorable if she shapes like a pumpkin though. π» Baby is great with variety of food when Sonya has stomach issues so I couldnβt give her anything other than her own food. I love little chubby kitty as I can dive into her belly but Sonya couldnβt get to that level. π»
I hope the weather is better now in the UK so Baby wonβt be too stressed out. It is still hot over here esp in September so I keep Sonya and Lucy indoor with plenty of water and all day central air on. π

Pumpkin here in the UK is seasonal as well same as with turnips.
Butternut squash and sweet potatoes we can get any time.
Its still warm here in the UK but not ridiculous like it was back in July!
Baby has had a variety of foods since she was a kitten so is used to lots of things.
Today was a great walk and chat with my sister in law when I said about how I had been upset over being accused of being bitter and she says no I'm not bitter and that was said to me to shut me up when I said about being angry over being treated badly by family and got shut down and called bitter and I was ever so upset!
Well OK perhaps I was bitter when I was bringing things out into the open but with good reason as parents are supposed to support and help their children not try to harm them and destroy them and yes maybe I was bitter over that but in no way am I bitter all the time though.

Iβm sorry you are going through so much stress with family. A healthy distance sometimes can do wonder and then revisit the issue when everyone is at their state of calmness is better I think.

This week I have some nice things to look forward to like going to the lido on Wednesday and going into town tomorrow with my sister in law to walk round the shops and for friendship.

I have come here to get some fresh ideas on vegetarian recipes as we decided to cut down on meat due to the whispers over shortages.

Years ago there was a lassie dog that lived near us!
Whispers over shortages of things like meat and milkshakes things that are nice but not essential so what we decided was to do without meat and use this as an opportunity to try out new things say like vegetarian recipes as where there's problems there's opportunities as well if you look for them as we have found cutting back on meat saves us money as well.
Friday myself and my friend went to our local pub and had asked the lady on the counter about what things were actually available so we took those things instead.
The couple on the next table to us had wanted mixed grills and got told they were sorry but they were out of gammon and had given them extra chicken instead and I had said how its frustrating when you are looking forward to something and you can't have it and had said how we had used it as an opportunity to cut down on meat as problems can be turned into opportunities.

You know Catgirl, I am currently watching this show called Million Pound Menu on Netflix and they are UK restaurants chain investors looking for great concept and they mentioned that 1/3 of people in the UK reduced meat and they are promoting many Vegan restaurants as itβs a trend over there now. Hope you find some great restaurants there and enjoy! π€

Where I used to work there was a vegan restaurant over the road called the Moo's and one day I received an invite off one of my friends there to meet up there along with the vegetarian welsh teacher one lunchtime and I had decided to give it a go as it was a nice change.
