I made this garlic and herb cheese yesterday/today. I scattered a few bits and bobs on a board to make it more of an evening supper. The cheese was really nice and easy to make. Although not being good at following recipes it all went a bit wrong and turned into a cheese sauce haha, (probably added too much water) so I heated the “sauce” gently and added a little agar agar, left it overnight and it then set into the consistency of boursin cheese which is what I was after. I covered it with dill and a little lime zest. I wanted to share this as it’s very easy and I think it would appeal to most people. I have contemplated making cheese several times and thought it would be difficult or time consuming and this certainly wasn’t either. I have put the ingredients below but I doubt it’s an exact science.
Next time I think I would add peppercorns or chilli for an extra kick.
Ingredients:-
2 cups soaked cashews
2 tablespoons nutritional yeast or a cheesy flavour
1/2 teaspoon salt
Juice 3 lemons or sharpness
3 cloves of garlic
1/2 to 3/4 cup of water (little at a time)
2 tablespoons olive oil
blend all ingredients except the dill until smooth. Put in a muslin cloth and shape. Leave in the fridge over night.
Dill and lemon zest to garnish.
