Jerry, you might be interested in this video from the Fruit Doctor which drills deep into which fats are good/bad/indifferent for diabetes. Apparently this is the first of a series on the subject. I think also it helps to explain some of the controversy around fats causing diabetes.

Her website has a lot of simple recipes.
She often visits the UK to speak, and I was lucky to attend one of her talks and cooking demonstrations (and sample the food!) a couple of years ago. She doesn't work only with diabetics but does claim to have helped many of them control or reverse the condition with a whole food plant based diet.

Well, I'd look at simple soups with favourite vegetables and coconut milk/cream to make a cream soup. You can make simple ones with a tin of pulses or tinned tomatoes and just blend them with garlic, herbs and spices etc.
Hi Jerry, not sure if you already know but if you typed into Pinterest your requirements. I.e vegan diabetic recipes it would be sure to come up with a few suggestions. I am always using Pinterest for plant based inspiration.
