The most common form of a dysfunction of the thyroid gland is an Autoimmune Thyroid Disease also called Hashimoto's (named after doctor who discovered the person had antibodies which attacked their thyroid gland). There is also hypothyroidism in which the person has no antibodies.
Going gluten-free is recommended for those with hashimoto's as it helps reduce the antibodies that attack the gland and eventually renders the person hypothyroid. In the following link if you look under 'About the Thyroid Gland you will see Autoimmune Thyroid Disease and it will also explain about antibodies etc. Plus the other types of dysfunction.

You previously say you were diagnosed with "immunothyroidism" which I presume means autoimmune thyroiditis, aka Hashimotos, diagnosed by elevated thyroid antibodies.
This can cause inflammation in the body leading to many other health conditions and particularly gut and nutrient/iron absorption issues, when the immune system goes into a state of high response. .
Many with Hashimotos benefit from a gluten free diet because the molecular structure of gliadin (protein portion of gluten) resembles that of the thyroid gland. When gliadin breaches the protective gut barrier (weakened from low stomach acid & imbalanced flora, resulting from years of low thyroid hormone) and enters the blood stream, the immune system (antibodies) tags it for destruction, so further heightening the immune systems response.

Going gluten free literally changed my life but it has to be 100% gluten free for it to work with me otherwise I'm still ill
They put me through four gluten trials because of the sudden improvements to my health and reversal of some issues and after six weeks of eating gluten, my tsh raises to 30-50 each time.
May not work for everyone but definitely worth a go?
