Firstly......is there a link with hashimotos and all of a sudden my finger nails like crumbling and breaking and feeling really weird? It's like they are flaking off from the top....
Secondly.....I've decided to go Gluten Free. I think it can only help and not hinder me and I'm bored of feeling bloated and uncomfortable. With this in mind I've bought a bread machine and GF here in France is foul. Does anyone have a fail safe 'normal' kinda white and whole meal beard machine recipe they could share with me. It will feed all of us as I'm going to change the bread for all the family. Easier that way.
Thirdly and finally.....I'm starting to feel really tired again and 'flat'. I'm not sleeping well and I can feel brain fog getting worse. I'm on 125mg now of Levothyroxine and due to see Endo in 3.5 weeks. I think she's going to up my dose again. Is this why I really have no libido? I'm finding this a sad part of this illness.

Shame you don't have the B12 and folate as often they are depleted in those with Hashi's especially as you indicated you have stomach issues.
Anyway the body ensures essential organs such as your heart and lungs get nutrients before your nails and hair. So if you are deficient in any nutrients then 6 weeks to 3 months later you will notice issues with your nails and hair first.
The optimal levels of nutrients recommended here are higher than most other places as you need them to ensure your thyroid hormones work properly . Generally your ferritin should be 70-80 to halfway in the range, and your vitamin D3 level should be around 100 minimum. (The one good thing is you don't have iron deficiency anaemia.)
So you need to supplement your vitamin D3 as well if you aren't doing so. You should take 2,000IU per day. Then if you get sun e.g. sunbath, garden in the sun in the summer stop taking it. As long as your level stays under 150nmol/L you will be fine. The maximum of the vitamin D3 range is much higher but for safety sake you don't want to reach that level otherwise you will have to spend summer staying out of the sun.
Other than seeing what your levels of thyroid hormones are when your endo tests you, you should also get your B12 and folate tested to see if you need to supplement as well as going gluten free. There is no point taking loads of supplements if your gut isn't healthy as you simply won't absorb them.
I would recommend weaning off gluten gradually over a couple of weeks as it can be a shock to the system. Replace with plenty of fibre, e.g. from veggies.
