Welcome to the forum, Lizcamilli.

Increasing muscle mass increases weight because muscle is heavy.

To know whether you are gaining muscle or fat you need to measure your bodyfat %age. Some scales do this or you can buy calipers from a medical supplies shop and learn to use them (you really need a partner to so the back and triceps skin fold test).

Even in a young man (unless on steroids) 7lbs in a week is not likely to be all muscle. Lift heavy and eat protein with digestive enzymes. Whatever the current version of Metrx is might help, but many weigh gain powders are full of sugar and junk.
