Look down the right hand side of this page and there are a number of headings, one of which is "gluten free chats". By clicking on this all the gluten free posts and recipes are in there. There are not many at the moment because this section has not been set up long but we are hoping that over time, with people adding more and more posts/questions/recipes it will become a very useful section on this site.
I think this is the post you wanted as it has three or four bread recipies on it but if you actually go into the "gluten free chats" section there is a mince pie recipe and also a cake one. If you have any good ones yourself please do post them.

There are days when I crave bread - it is, for me, the hardest thing about giving up Gluten! I have lost a lot of weight (slowly but regularly) over the past 6 months by not eating bread (and therefore butter which I absolutely love) and also potatoes - I eat sweet potatoes instead - but when I get a real craving, I make a 90 second 'loaf' in a cup - just enough to have butter and jam on and sort out the craving:
1/3 cup Almond Flour (I make that about 1.4 ozs??)
1 tablespoon flax meal (or coconut flour)
1/2 tspn baking powder
1/8 tspn salt
1 egg (whisked)
2 and 1/2 tblspns butter (or coconut oil or olive oil)
Grease a standard sized mug. Mix all ingredients together with a fork and pour into mug. Microwave for 90 seconds. Cool for a few minutes, pop out of mug and slice - not like a slice of wholemeal but might just be enough to quell that yearning!!
Thankyou . I have tried some of these now and they are certainly much better than the bread you can buy.
Dove Farm bakery do a range of flour mixes and cake mixes for GF, you could try their website for stockists and I've just found some great tortilla style wraps in asda that freeze really well too.
