It seems like lately I can sit down to eat and almost instantly have to run to the bathroom with watery stools. Has anyone else had this happen and if so what can I take to help alleviate?

Have dealt with similar responses to food for a long time. I’d recommend keeping a food diary to see if you can pin down any repeat offenders. You’ll eventually start to see a trend, i’d think.
Next, I’d research low FodMap diets to see if they’d work for you. Good way to pinpoint trigger foods, as you slowly reintroduce low to medium fodmap food items.
Lastly, i’d say, consider the size of your meals. Do you eat a big, full plate/bowl of food at each sitting? If so, consider that to avoid overly aggressive gastrocolic response (aka, having to run to the bathroom right after eating) , IBS-friendly meals tend to be on the order of a cup or two total, for all food at that meal. (Of course you’d repeat this size, 3-5 times daily to ger your ideal calorie intake)
Have you had all the tests done and been officially diagnosed with IBS? The tests are mentioned here:

Your GP should be helping you to manage symptoms. They can also run further tests for Bile Acid Malabsorption.
Failing that you could try Alflorex probiotic. I would try this in the first instance.
If that doesn't work, ask your GP about the FODMAP elimination and reintroduction diet and whether you can get referral to a dietitian for it,

I’ve been exactly the same for the past 2-3weeks I’ve been to A&E because I couldn’t get to speak to my GP. I’m now awaiting a colonoscopy in the next two weeks. I don’t know if you’re in pain with it but I am,so I have to do something. I’ve took the advice of some of the ladies on here,and it’s slowed down a little. I know how you feel it’s scarey. Try eating little and often with foods to bind you. My heart goes out to you.
