Spelt pasta :-(

I posted a few weeks ago that I am trying to load up with gluten before I have repeat blood tests for coeliac. The first one was done without prior notice, so obviously I did no prep for it.

Last night, I had spelt pasta with ragu and cheese. I ate a small amount and very quickly started to bloat. Now I have been up and down all night on the loo with pain and slight nausea and extreme tiredness. The last couple of times I had this pasta I noticed some bloating, but manageable. Last night I even had a degree of gluten ataxia, which is not usual for me.

This leaves me with rye crisp bread, which I am fond of, but you can get a bit fed up. If that starts to cause problems too I don't know where to go next. I am now at three weeks, so three more to go. I am not feeling very well with this. Is this enough? Not sure I can do this for another three weeks. Thoughts and suggestion welcome.

You need to consume at least 1 main meal per day (2 slices of bread or a portion of pasta) for at least 6 weeks to be consuming adequate to have the gluten antibodies in your system. This is the reason that we advise not to exclude gluten before testing.

Thank you. I am aware of this, which is why I am making an effort to eat gluten at least once a day.

My GP thinks I have a wheat allergy. By a process of elimination, I worked out that wheat was a big problem for me at least six years ago. It affects me so badly that I cannot function if I eat even a microscopic amount. As I have caring responsibilities, I need to be able to function. Up until recently, I have been fine with spelt pasta, but that seems to have changed, which may indicate that I am indeed coeliac. Or, it could be the spelt was sprayed with glyphosate prior to harvest. Who knows? I have rye flour, so could bake with this. If rye becomes a problem I am scuppered. Unless you have any other ideas. I have yet to try Emmer, so maybe I should get some of that.
