If you had test every test under the sun 12 months ago and diagnosed with Ibs and then not had another flare up for months how do you know it’s not something else. I have had a lot of stress and I know worrying about symptoms doesn’t help.

Stress can be a major cause of IBS problems. Not having flare ups just means the IBS is under control.
You can ask to be re-tested if your symptoms have been under control and have come back again. I have had multiple stool sample and blood tests in my life time - all came back with IBS, but it is worth getting to set your mind at rest rather than speculating.

You don't need endoscopies and scans every year!

Yeah but blood tests might be able to tell if you are anemic or have inflammation markers high (that hints for IBD).
