How about waffles or pancakes. Scharr have just bought out a pack of waffles. Or even a choc au pain by the same company.

I also don't do cereal and milk, and find I don't tolerate or enjoy most GF bread so I go Continental and have sliced ham and sliced cheese with some fruit or juice. Very occasionally, if it is cold weather, GF porridge with a little cream and honey also works for me.

You can make gf waffles with gf flour - I have a good book The FODMAP friendly kitchen some great recipes in there. Maybe dairy free yoghurt and banana or strawberry? X

I have an adaptable recipe for sweet or savoury bread using Gluten Free Oats. It can also be made lactose free by either using Lacto free yogurt and Lacto free milk or coconut yogurt and coconut milk.

My favourite is made using chopped apricots, sultanas, a little cinnamon, a little honey ground flax seeds and chia seeds with sunflower seeds sprinkled on top for "crunch" but you can add almost anything you fancy.

Oh! It's really easy to make too :)

The basic recipe and method is as follows:

Ingredients.

Large Tub plain yogurt ( may be Lacto Free or Coconut yogurt) Keep tub to measure oats.

2 Tubs ( use empty yogurt tub above as measure) Gluten free Oats ( I find I can tolerate Nairn's Gluten free oats but there are other brands which are supposed to be better and can be found elsewhere on this site)

1 large Egg

1 teaspoon Baking Soda (Bicarbonate of Soda) you can put 2 teaspoons but I don't like the taste so I only put 1 in.

1/4 to 1 cup liquid. I use lacto free milk or coconut milk but you could try water or even fruit juice.

Then whatever you fancy:

Maybe chopped dried fruit and some nuts and or seeds. I use a fair amount as it has to distribute through the loaf.

Add a little spice, whatever is your favourite. I like cinnamon and add about 1/2 teaspoon.

Add about a teaspoon of honey or Maple syrup if you like it sweat ( I also drizzle meted honey or syrup on top of loaf to make topping stick for sweet breads)

Could be sautéed onion and peppers for a savoury bread. Even some cheese if you are not lacto intolerant or bacon etc and sprinkle top with cheese etc.

Experiment with your favourite things.

Method

Heat oven to around 180 C, 350 F , Gas 4.

In a large bowl put the yogurt and two yogurt pots full of Gluten free oats and mix.

Add the egg and mix.

Add the liquid until you have a soft but not runny consistency.

Add all your other ingredients and mix.

Grease a loaf tin, pour in the mixture and make a cut with a knife down the centre ( this helps the shape and rise)

Bake for 15 minutes then add any topping you like. E.G. Melted honey and seeds or cheese.

Bake for a further 30 minutes then remove the loaf from the tin and bake upside down for the last 15 minutes. ( I often omit turning the loaf upside down as I have a heavy loaf tin which seems to cook the loaf through well and for less time)

The loaf is cooked when you can put a fork or knife in and it comes out without too much stuck to it)

I slice mine and spread with lacto free butter.

I also like to store in the fridge for 3 days or more though my loaves usually get eaten very quickly as the children like them too.

I eat this for breakfast most days as you can vary it so much and for snacks.

Can I ask you, have you managed to get rid of your food intolerance completely? I am wondering if it is possible to do.

I've been eating gluten free the food is horrible but I've managed to find some nice food and I've been ok it's just at night around 2.30 and first thing when I wake up i ache and I have to take codeine

in reply toHol28x

Thanks for that, Hol.

Codeine is pretty strong stuff. I wonder if massaging where it hurts with coconut oil and a couple of drops of essential oil of lavender (relaxation) or sage anti-inflammatory) could get you some relief.
