Hi bazooka111, those strawberries are far too good to turn into jam - you've gotta serve them up with lashings of double cream and if you need any help in demolishing them then I'm the girl. Can't wait for our English strawbs to be in the shops, I practically live on them during the season. Now I just want to say that I just love your posts, always so infectious and always oozing with happy smiles - I always feel I want to walk into those pictures and have some fun with you both. Just love the 3 you've posted, a great distraction from the TV. You are doing a grand job with your mum, what a lucky lady she is to have you, what a lucky daughter you are to have her. R U kidding....a recipe for Jam? Most of my dinners come from Trader Joes. I think that all those strawberries need is a good washing and they are good to go.....into the mouth. Ah luscious.

Thereβs a Chocolate covered strawberry recipe on here posted by Mottsie, aka Granny B. I havenβt found the time or energy to make them since Valentines Day. Or, they would be really good in Champagne too π

I have a look and see if I can find Mum's recipe when I visit this pm, she used to make fabulous jam from the strawberries her & Dad grew on the allotment, in fact I probably still have a pot in the cupboard ! I had to put a stop to her preserve making when she managed to throw a pan of Seville marmalade all over the kitchen in what could well have been a PSP backward fall but was before diagnosis, she was so lucky it sprayed away from her or she could have had very nasty burns. I was still finding bits of marmalade months later, on the ceiling, down back of cupboards, etc etc.
If eating fresh try ground black pepper on them, it really brings out the flavour and of course dip in melted dark chocolate -mmmmmmmβ¦β¦β¦β¦β¦β¦β¦...

Here's the jam recipe but I struggle to see how you will have time to make it, you are making so many great memories
2lb 4oz strawberries
juice of 1 lemon (approx. 3 tablespoons)
3lb sugar
1/2 bottle of certo (this is a pectin solution, necessary to get low pectin fruit jam to set)
1) hull the strawberries & place in pan with lemon juice & sugar for 1 hour, stirring occasionally
2) heat gently until sugar dissolves, stirring occasionally
3) add small knob of butter to reduce foaming
4) bring to rolling boil & boil rapidly for 4 mins, stirring ocassionally
5) remove from heat & stir in Certo
6) cool for at least 20mins to prevent fruit floating, pot & cover.
I always test the set before I pot by putting a saucer in the fridge before I start, then you put a spoon of your jam onto it, back in the fridge for 5 mins and then check that it wrinkles, if it wrinkles you are good to pot, if there is no sign of wrinkling you might need to boil it a bit longer, but the longer you boil, the darker your jam.
Best served on freshly baked scones with clotted cream !!!!
