I don't understand what you mean by saying pred has depleted her reserves. Depending on her current dose of pred and why and how long she has been taking it it is possible she MAY need slightly more - but without that information no-one can say anything.
She has been on pred for 10 years and that plus pmr lowers your immune system
PMR doesn't lower your immune system, pred does for some people. However, you haven't said what dose she is on.
After 10 years her adrenal function will be blunted so the body won't have got its usual spike of cortisol to help it cope with the infection. The usual procedure is to increase the pred dose temporarily to help. The details are here:

But it varies depending on the current dose of pred - you don't just blanket double your usual dose and should be brought to the attention of the GP.
If she has been on antibiotics for the gastroenteritis then maybe a short course of a good probiotic might help her recovery. And a good diet of whatever she can tolerate - her gut will be a bit irritated for a few weeks.
