In recognition of this week of raising awareness of PMR and GCA I made this chocolate courgette cake and took it along to my local compassionate community group. The lovely people there donated £22. I'm so grateful to everyone for their support and greater understanding of this condition.

Thank you Megams. This wasn't a gluten free cake but it has raising agents in it so it might work with gluten free flour.
The recipe I used was 250g plain flour, 375g golden caster sugar, 65g best cocoa powder, 2teasp bicarbonate of soda, 1 teasp baking powder, 1/2 teasp salt, 1teasp cinnamon. Stir these together in a bowl and add 4 eggs, 350ml vegetable oil, and 340g grated peeled courgette. Mix thoroughly, turn out into a greased 20x30cm tin (or a round one) bake at 180 degrees C for one hour until a knife inserted in the middle comes out clean.
I served it with a vanilla butter cream icing and strawberries. It's moist and chocolatey without being too sweet. And I'm no baker, so I was delighted with it. Hope you enjoy it too.
