Looking for answers to shortness of breath w/little exertion for my mom. She was diagnosed in 2016 with Hashimotos. No longer has it. I think she is still hypothyroid and she lost weight, she is at 100 lbs. Hard to gain weight. Does anyone know how to gain weight safely and without eating junk.

Diary foods , pasta rice creamy sauces. Fruit juice; nuts . Has she had her iron levels checked? Also to get thyroid bloods cheked. Is she b12 deficient?
She doesn't eat dairy, no pasta, wheat, gluten, no sauce, no juice. No rice - arsenic contamination linked to bladder and lung cancer. She does eat some pecans - could that be a problem? PUFA oils in the nuts. Mostly avoids nuts and seeds because of the PUFA oils. Just coconut oil and GF butter. She is O- blood type. Thyroid was done in Sept '18 - not done properly - "doctor" didn't know what he was doing. Waste of blood and $$. Not doing anymore blood work until she gains 20lbs. She currently weigh 100 lbs. I think she is B12 deficient. Not sure about the iron, I'll have to look at the blood test. But that is not reliable. Blood changes every day. I think vitamin D3 may be low also, last check was at 35. She was using a liquid supplement, Vitamin A D K Thyroid formula from Forefront Health. Didn't seem to be absorbing it well. May need companion nutrients or take with fat to absorb? Do you know? Pls advise. Thanks.
