No knead slow fermentation bread recipe: for achy hands ;)

Just wanted to share this, for all who failed at lockdown sourdough! That'll be me... And of course for those whose hands are struggling with things like chopping, mixing and kneading. Also, although true gluten intolerance is very rare, it is thought the the reason people often feel genuinely better when giving up bread is perhaps not gluten related but the unintended cutting out of fast fermented yeast (Chorleywood method) which is thought to be pretty bad for the gut. Slow fermentation in the attached recipe is apparently much better for us. Enjoy

One of our gîte clients (called Fred) told us that the casserole we had in the gîte was perfect for this sort of bread, and gave me a recipe plus a little wooden spoon that was the exact size to measure out the yeast. I’ve been making it ever since....... OH wallops his beloved sourdough, and I swan around making soda bread and Fred’s bread without raising a sweat.

Since i had weight loss surgery i haven't eaten bread. Hubby doesn't eat as much bread as he used to either. xxx

I never used to eat it because of my keto migraine diet, but have embraced it again lately. Although, was surprised how sweet sliced bread is. x

Thank you very much for this. I have known for many years that I cannot tolerate gluten and have tried many shop bought and homemade breads - most of which have the consistency of cotton wool with little or no taste.

I have never heard of slow fermentation but will be trying this today and look forward to tasty results tomorrow.

Thank you again. I am quite excited about possibility of some nice bread. 🤗

I use wheat flour. Daughter who gets terrible IBS when she eats any shop bought bread has no problem with our home made bread - either the sourdough, which is wild yeast, or Fred’s bread.

One of my earliest symptoms of inflammatory arthritis was problems with bowels, stomach etc. didn't know what it was at the time but rheum. nurse said it's common. I haven't until recently eaten bread, cakes or even a single biscuit, pudding for about 10 years because of migraines. During that time my tummy problems began and they are no different now that I have started eating carbs, wheat flour etc again. Having said that, I still stay away from pasta as it just makes me feel full and heavy.

How are you feeling ?

headachy, thanks for asking. took my second dose of MTX today but it's got nothing to do with that. felt headachy before I took it. thankfully I've had no side effects so far. what about you? what ever happened with the steroid injection? and how is the mtx injection?

My 'new pain' is in my upper back. Stings like crazy in my spine and the ache is spreading into my ribs. The vertebra are sore to touch too. Also got the sacrum problem which seems to be getting worse. It's sore to lie on.

Such good news about the methotrexate, so glad you tried it, just got to wait a fair few weeks for it to work 🤞

I had the steroid injection fair few weeks ago and it did help but I think my expectations were a bit too high as I still had pain.Thats the thing with being new to this its a big learning curve !

3rd MTX injection tomorrow, last week I felt like I had a hangover the next day but nothing terrible, so glad (touch wood) they are better than the tablets for me.

We have really similar symptoms, i get rib and sternum pain quite often, the rib pain can feel so painful but I find trying to relax about it helps, I use to get really upset about it but just got to let it pass. Will change once DMARD starts working 👍

You do have a hard time of it with headaches and migraines, hope the coming days are better for you, we will feel better than what we do now, early days for us both but least we are on the right road x

Thanks M - you're not about learning curve. I find trying to come with good descriptions of pain difficult and then that's when I find myself wondering if it's all in my head!

Do you get nodules?

When I eat any wheat i get bloating stomach ache, and my joints hurt more and don't feel to good

so try to stay away from it other than when I was naughty a few weeks ago with KFC and paid for it since

I did have a blood test for allergies it picked up on wheat and yeast , I am not coeliac, just an allergy

I would so love to eat some bread, I did try spelt bread but again couldn't have it

ps before RA I used to eat bread normal shop bread till the cows came home and get away with that but I couldn't eat full wheat products other wise ID have upset stomach

ok, sounds as if you are yeast / gluten sensitive .. so try sour dough or wheaten or soda bread which is made without yeast... or buy a little to try.. maybe that's 4u. good luck
