Davita has information on food, and nutrition information. Also some recipes good for kidneys.

We do stir fry a lot, with onions, black olives, celery, rice noodles, and water chestnuts as the stable. We also make our own fake pizza sauce, either a non dairy low sodium white sauce or a beet based red sauce for a veggie pizza. There are a variety of plant based protein options that we've found to be good (depends on the brand!). We do take some of the lower potassium foods and boil for 10 minutes, rinse, drain, and stir fry. We also do our own Ramen soup. It's definitely challenging to do a variety and it does take time for special food shopping, prep and cooking but it can be done!

Your question is a little vague, as I don't know what your desired carb limit is, and if you are specifically asking about produce. I have a few suggestions:

yourlighterside.com/easy-pi... is chicken and cheese pizza crust. I am not sure if you have cheese restrictions or are vegan. Read notes for the recipe before you try it (it'll keep the crust from getting too soggy).

The recipes at that site are low carb, but you will have to check the ingredients to see if there is a potassium issue.

I'd check out davita's recipes, but make sure the carbs aren't too high. It depends on the recipe.

Don't forget that if you eat too much cheese or nuts, you can end up with high phosphorus levels, as well. I goofed that up more than once.
