Does anyone here eats barley subs to rice?

Barley is good for diabetic poeple and low in other things that is bad for CKD people. So does anyone consume it here replacing white rice?

Hi Manny,

Yes I have used barley in a couple of recipes. Barley is higher in Potassium and Phosphorous than rice. Calorie and glycemic are about the same. It is a matter of taste. I do not like it as a stand alone but in soup it is ok.

I eat barley soup instead of rice soups.

I like it in soups and stews but not as a stand alone. The pearled barley is what I use, for the past 40 years or so. It goes well with lump TVP .
