Im doing well with breakfast, porridge with banana...but im struggling with lunch ideas. I'm vegetarian and don't eat eggs or fish. Any ideas?

Rice or Couscous Salad. Bean Salad Jacket Potato with Cheese, Baked beans or a vegetable chilli.

My fave lunch is caprese salad. Mozzarella, slices of quality tomatoes, half an avocado and baby leaf spinach. You can dress it with lemon juice if you like. I also have a piece of buttered baguette with this. Yum!

My favourite too Ruby. I like ciabatta bread and olive oil with it.

I often make batches of soup with my left over veggies. If you freeze them they are easier to take to work.

I have to say in this chilly weather you can't beat a really nice soup if you can either use somewhere to heat it up or you have an effective flask - I tend to buy the fresh ones from the supermarket chiller cabinets but you could also make your own - tasty, warming and filling

Do you eat Bread? Wraps? There are different kinds that don't have eggs or flour. I buy them from local Indian / Lebanese shops. Some are amazingly spicy! Make avocado mixes; or versions of salsa and take it in a separate container. Soup. Soup would be my default. Sorry, not very original!

I bake onions, celery and root veg I like in quantity. With or without herbs and seasonings. Use stock or coconut milk (light). Maybe add green veg. Usually split into large portions and vary flavours to some extent. I usually end up with a baby-food like slop which I freeze! When I defrost it I make it more liquid. I like Knorr stock pots. Check salt content of stock.

Home made soups, with pulses for added protein & fill factor. Home made hummus with carrot, cucumber, peppers etc. Quinoa with salad chopped into it. All filling & protein sources.

Im vegetarian too, tomorrows lunch is Roasted peppers,red onions and tomatoes in a wrap with a little Philadelphia lite and rocket . fat yoghurt and some defrosted frozen fruits of the forest. I also have soups,or pasta salads

Home made soup. I have just bought one of these soup maker machines. So easy you can use everyday veggies add left over chicken or cheat and buy a pack of prepared vegetables water stock cubes , turn it on. 20 mins later a hot warming lunch.

I had a good salad the other day. Really ancient Feta, it's much more tasty when mature and has been kicking around in the 'fridge for weeks, Halved baby tomatoes, mustard and cress, some chopped celery and shop bought coleslaw. I added a couple of small potatoes, I don't peel these just slice fairly thickly and cook for a few minutes so that they still have a bit of bite, add those hot, and some pomegranate seeds. I'd been ill and had to eat what was available at home. You could also add nuts of course but I tend not to have them in the house as I'm prone to toss down great handfuls in feeble moments. Sunflower seeds ? The more variety in the texture and colour the better I think.

I'm also vegetarian.

My lunches vary from the following...

Soup & cheese & marmite sandwich

Ryvita with avocado, cheese & tomato

Dal & rice with quorn frankfurters

Home made spinach & mushroom quiche with salad

Jacket potato with beans, cheese & kale

Left overs from whatever I've cooked at the weekend (veg casserole with soya chunks / stir fry/ veggie lasagne etc)

Plan some nice meals and make it fun!
