Start of a new journey - day 10

Hi everyone,

This morning I have done my first Zumba fitness class and boy did I sweat!! I'm rhythmically challenged so it probably wasn't very graceful to watch but I did enjoy it and I am looking forward to doing it again.

I must have drunk at least a litre of water afterwards but that's good right!

My challenge for today is not to spend the day in front of the computer studying but to get moving and get my steps up as they have been a bit lacking this week ;-)

Yesterday I made my own almond butter!! Shop bought is so expensive and this way I know exactly what is going into it. It is rather tasty but must try not to eat the whole pot!! Am going to have a go at peanut butter next week.

Hi Rosie,

Sounds like you're having a great day, and I am impressed that you made your own Almond Butter. How did you do that? I'd be very interested to know, if you'd care to share your recipe. I love nut butters.

It's a lovely sunny day - and I'm just having my lunch.

Almond Butter

300g skin on almonds

a good drizzle of honey, I used about 1 1/2 tbsp.

Heat the oven to 190 C/gas 5, spread the almonds on a baking tray and roast for 10 mins. Allow to cool.

Put into a food processor and whizz for about 12 mins, stopping to scrape down the sides every so often.

Add a drizzle of honey and whizz to mix.

Scoop into a sterilised jar.

Will keep in the fridge for around 3 weeks.

Hi Rosie,

I've never tried making peanut butter. Sounds interesting. How did the almond butter come out? I have to say I love peanut butter flavor (not peanut butter itself, just the flavor :) ) but have never tried almond.

My husband thought there was butter in peanut butter... :D

I also found one on another site which is exactly the same, but doesn't include honey.

I'm going to look for a peanut butter recipe now ... My mouth is watering 😄

Yes it is the recipe from bbcgoodfood.com

It does take a while, about 10-15 minutes, to blend it to the right consistency but it is well worth it :-)
