I asked to see an allergy consultant - initially because I was worried about ingredients in the COVID vaccine, but I've lived with major (some anaphylactic-level) allergies all my life - new to this area. The message I got in return was the clinic didn't see the point as they can't test me for the ingredients I was concerned about. So does this mean that ALL the allergy clinics are now simply a tech and testing centre? What about REAL consultants? Do these even exist in UK any more? - someone to give me some advice maybe? I've HAD skinprick tests and frankly am not impressed... also they very rarely HAVE the allergens I am asking about.

Sorry to hear that you are having such a hassle getting properly tested. The different Covid vaccinations (Pfizer, Moderna, Astra Zenica) have different ingredients but that doesn't really help you if you don't know which ones you might react to.
