Does this lady have an opportunity to do some cooking/baking? If this is an option United Response have a number of recipe videos aimed at people with a learning disability. Here is one, but there are many more:
Is there a chance to go outside at all? It is probably the wrong end of the year but a bit of gardening might be good. Also, would she be interested in some shopping?
I am sure you have done plenty of cleaning (dusting, sweeping, vacuuming). What about watering plants, tidying up or replenishing loo roll?
Could this lady's enthusiasm be transferred to crafts? I know it is not quite the same but it is still very useful and creative.
