Strawberry mousse cake

A bit rough due to hand pain but I am pleased to have finished it. Happy Sunday everyone ❤️

The sponge cake I think is far too heavy a recipe for this cake, with the almonds and lemon it is crumbly almost like a shortbread but the mousse is lovely inside , the first I have made with vegetarian gelatin so I will definitely make it again but with a whisked sponge base xxx

I enjoyed making it but the sponge is not like any I have tried before, it had double cream in it only one egg and one egg yolk and a high proportion of ground almonds. It tastes lovely but is very crumbly. The only thing I was concerned about was the strawberry mousse as since going vegetarian I have not made mousse. I used vegeset and unlike gelatin it thickens immediately so I had to sieve it . I need not have worried it was lovely. I managed the treadmill today, slower but pleased I managed it. My hand is difficult to bend and very swollen and blue black as is my shoulder, arm and breast but the worst discomfort is my breastbone. There is not a mark on it but it is very painful when I lean forward it takes my breath. Thanks so much for asking xx

I've never used any vegetarian cooking ingredients so cant comment.take it easy if it doesnt improve I hope you will contact your gp to check you havent cracked your sternum or a rib.i know from experience though that pulled chest muscles take weeks to heal.i suffer bronchial spasms when it's really cold and i once pulled all the intercostal muscles on my right side ....boy was it painful for a good 4 weeks. I'll blow you kisses instead of sending hugs xxxxx

Cake is my hubby’s treat I just have a tester to see what it is like. In this case the sponge is far too heavy a texture in my opinion so I will make it with a whisked fat less sponge next time xxx

I usually use a fatless sponge, whip up the egg whites into a meringue, add sugar and egg yolks then fold in the flour [plain] a 2-2-2 recipe, 2 eggs, 2 oz sugar and 2oz p flour. yours looks yummy but i've put on 2 stone this year so i've not made any cakes this summer. :(

I used to love decorating them but now my hands shake and my finger tips are numb so it’s a non starter. This was a recipe my hubby fancied. I made the first cake and he dropped it. I was very tempted to make a Genoese sponge or like you suggest a featherlight sponge but decided to stick to the recipe. It was quite odd only one egg, one egg yolk, double cream, ground almonds, lemon and flour. It was extremely light going into the oven but set like a shortbread and very crumbly. Next time I will trust my instinct . Oh I hope you do have a little cake just as a weekly treat xx

Thank you so much, the mousse inside was lovely, something I have missed since becoming vegetarian but the Vegeset worked well. The cake is too dense for the recipe I think next time I will make a whisked sponge cake instead xx

Wow, what a treat! 👌 Although you aren’t happy with the sponge base it looks amazing and my mouth is watering looking at it. 😋 Considering you had a bad fall very recently I don’t know how you’d did such a fantastic job of the scrumptious looking cake. I bet it is delicious. Is there any left? I’d love a slice! Thanks for sharing it with us Cecily - if only we could sample it. Take care and I hope the bruising is going down now. 🤗😘💕x

Thank you lovely. No I definitely would not stick to that recipe again. I can understand why they used such a crumbly textured cake because the mousse and fruits are soft but my preference would be a lighter sponge cake. I must admit when hubby dropped the first cake I nearly gave up but then had a word with myself and carried on. My bruises seem to last forever. I have three large ones on my legs that are two years old from a fall. They just do not go although they are faded. My poor shoulder is purple and my right hand is swollen and blue, black. Last night I sat whimpering just wanting sympathy because I hurt all over. As usual my hubby made me laugh. He is a tonic. I do not normally give over to blatant self pity but I have mouth and genital ulcers, a headache from hell to go with my bruises and my poor knees. He said he is going to put me in a home lol Until I told him if he did he would have no more cakes so he reconsidered 😂😂xxx

Bribery and corruption! 😂😂I love it. Thank goodness our hubbies cheer us up. So sorry to hear your bruises are so long lasting and I know what the mouth ulcers are like but luckily have never had the genital variety - sounds excruciating. So that together with your blinding headcache and your poor knees you are entitled to indulge in some self pity now and again. If you don’t I will for you because you are going through a lot and deserve some sympathy. But you battle on and make cakes and use your treadmill when you can. That’s the spirit and with that fighting spirit you’ll get there. Do you remeber that song along the lines, “I get knocked down but I get up again, you’re never going to keep me down....”. That’s what you remind me of. A true inspiration. Keep doing what you are doing! Love and hugs 💝🤗😘x
