I just shared this on Healthy Eating, but it really belongs here. The macros are close to ideal

My version has boiled eggs, bok choi, beansprouts, tomato, cucumber and prawns. I used prawns instead of prawn crackers because I don't eat carbs, but they weren't at all crunchy😁

It's topped with a peanut sauce made with a Thai curry paste (I used jungle curry, because that is what I have), peanut butter and coconut cream or coconut milk. Cook on the stove top or microwave, and adjust the proportions to your taste.

Out of interest, is that 1463 calories for the amount of food on the plate in the photo? It doesn't look like there is enough sauce to get to that total. I love peanut sauce! 🥜🥜🥜🥜❤️

Well I was just thinking that perhaps every time I eat a peanut sauce, made from similar ingredients, I must be naively/ optimistically and drastically underestimating the calories.... so I'm pleased my internal calorie guessing powers aren't completely off.

Might make a similar dish soon. 😊

Looks good. I often add peanut butter to stir fries with a bit of Thai green or red curry paste. Instant meal 😊

I don't eat starches or beige carbs, I guess is the best way of putting it. Eg no grains, no potato or other similar root vegetables,no sugar, no highly processed foods, not much fruit.

Thanks for that. I have it a bit difficult with the lowfodmap thing so I think I need some carbs, just very low amount.

I would suggest sticking to carby vegetables if you can, rather than processed foods and grains
